Ever since my childhood, I have always wondered one thing and that is "Mom is mom and the taste of her hand is the best. No matter how many good and exact ingredients I use, but when she makes the same thing, the dish turns out to be extremely best. Why? "
Again I got a chance to learn one of such lovely delicacies that she masters in.
Actually, this delicacy is called as SHAKKARIYA NU SHRIKHAND at my place where a shakkariya means sweet potato and shrikhand means an Indian sweet that has mousse like consistency.
Sweet Potato Mousse
Sweet potato - 400 gms, peeled and pressure cooked for 2 whistles
Thick Curd - 500 gms
Sugar - 4-5 tbsp or As sweet you like to have
Saffron - a pinch
Ellaichi powder - 1 tsp
1. Once the potatoes are pressure cooked. Let them cool down and peel off the skin.
2. Now put them in th blender and gradually add curd while churning them to a mousse like consistency.
3. Add sugar, saffron and ellaichi powder and again give a nice churn.
4. Refrigerate it for few hours and serve chilled with garnish of some saffron strand
NOTE : YOU CAN ALSO ADD DRY FRUITS OF YOUR CHOICE.
