Everybody has a special place for cookies in their hearts. I am no exception in this. The love for them is definitely evident in my next experiment
RUM N DARK CHOCOLATE PINWHEELS :)
O god!! don't they really look sinful?
Butter - 50 gm
Caster sugar - 50 gm
Refined flour - 100 gm
Baking powder - 1 1/8th tsp
Vanilla essence - 1/2 tsp
Rum essence - 1/2 tsp
Milk - 1 1/2 tbsp approximately
Coco powder - 3 tbsp + milk as needed
Brown sugar - as needed to sprinkle
1. Whisk the butter and sugar well together. Add to it the flour, baking powder and vanilla essence. Mix well. Gradually add milk to make a moderately tough dough. Divide this dough into half and in one of the portions add rum essence, coco powder and knead well. To this portion add the milk gradually again to make a moderately thick dough.
2.Put each dough between two sheets of plastic and roll in to a roti like. Do not remove plastic from both of them. Now, remove the top plastic of both the dough. On one of the dough, sprinkle brown sugar [ this will help in caramelizing and sticking of both the dough to each other].
3. Put one roti on other and again put a plastic on the top. Roll this so it sticks to each other. Start rolling from one end in to a roll, while gently removing the plastic.
4. Refrigerate this roll for 5-10 minutes. Cut into roundels then and press it a bit between palms.
5. Bake it for 20-25 minutes in a preheated oven at 180 degrees.
Once baked, let them cool and then just let it tickle your taste buds.
